Cut the marzipan in half and put one half aside in a food-safe bag. Place the
other half in a bowl and gradually add yellow food colouring.
Knead the colouring into the marzipan until it is evenly yellow. If it sticks,
lightly grease your hands with butter. Divide the yellow marzipan in half.
Put one half of the yellow marzipan aside for the chicks’ bodies.
Add a little red colouring to the other half and knead until it becomes bright
orange. Add more colouring gradually if needed.
Divide the yellow marzipan for the bodies into five pieces. Roll four pieces into
balls, then pinch one end of each ball to form a tail.
Use the remaining yellow piece to make eight tiny wings. Press one wing onto each
side of every chick. Make small eye holes with a cocktail stick, then put it away.
Use some orange marzipan to make a pointed beak for each chick.
Make small orange balls for the feet, flatten them and cut each one from its edge
towards the centre. Open the cut to form two feet and place a chick on each base.
Serve the chicks or store them in an airtight container, following the marzipan
packet’s storage and use-by guidance.
Make the bunnies
Take the plain marzipan from the bag. Add red colouring very gradually and knead
until it is pink. Divide it in half and return one half to the bag.
Divide the piece you are using in half again. Use one half to make three balls
for the bunnies’ bodies.
Divide the other piece in half once more.
Roll three smaller balls from one half to make heads. Use the other half to make
six ears, three noses and three tails. Pinch each ear to create a fold.
Press the ears and nose onto each head, then attach each head to a body. Add a
tail and use a cocktail stick to make two eye holes before putting it away.
Serve the bunnies or store them in an airtight container, following the marzipan
packet’s storage and use-by guidance.
Make the miniature Easter basket
Divide the remaining orange marzipan into four pieces. Shape one into a circular
base and the other three into thin rolls. Coil the rolls around the base, one
above another, to make the basket sides. Add decorative marks if you wish.
Add a little more red colouring to the remaining pink marzipan and mix lightly
for a marbled effect. Make several miniature eggs and a thin roll for the handle.
Put the eggs in the basket and attach the handle. If it does not stick, lightly
dampen each end with water.
Serve the basket or store it in an airtight container, following the marzipan
packet’s storage and use-by guidance.
